- 1Wash and trim 3-4 asparagus spears, cutting off woody ends. Cut into small pieces.
- 2Steam asparagus for 8 minutes until very tender.
- 3Whisk 1 egg yolk with 1 tablespoon of whole milk.
- 4Cook egg mixture in a small buttered pan on very low heat, stirring constantly until just set (like soft scrambled eggs).
- 5Chop steamed asparagus finely and fold into the egg.
- 6Serve warm. Asparagus is rich in folate and prebiotic fiber.
