Crispy on the outside and tender inside, these zucchini fritters are a great way to introduce vegetables as finger food. Cut into strips for safe self-feeding.

Ingredients

Zucchini1 medium
Egg1 large
Wheat2 tbsp flour

Instructions

  1. 1Grate the zucchini and squeeze out all excess moisture using a clean towel.
  2. 2Beat the egg in a bowl and add the grated zucchini.
  3. 3Add a small amount of wheat flour to bind the mixture — about 2 tablespoons.
  4. 4Heat a small amount of oil in a pan over medium heat.
  5. 5Drop spoonfuls of batter into the pan and flatten into oval or strip shapes — avoid round ball shapes.
  6. 6Cook for 2-3 minutes per side until golden. Cool and cut into strips before serving.
