Sheet-Pan Salmon, Potatoes & Green Beans

One tray, one family dinner. Salmon, potatoes and green beans roast together, and you lift out your toddler's portion before seasoning the rest for the grown-ups. Salmon is a low-mercury fish rich in omega-3 fats.

Ingredients

Salmon300g
Potato2 medium (~300g)
Green Beans200g
Olive Oil1 tbsp
Lemonoptional1/2

Instructions

  1. 1Heat the oven to 200°C (400°F). Cut 2 medium potatoes (about 300g) into 2cm chunks, toss with 1/2 tbsp olive oil on a lined sheet pan and roast for 15 minutes.
  2. 2Trim 200g green beans. Push the potatoes to one side, add the beans and 2 skinless salmon fillets (about 300g in total), drizzle with the remaining olive oil and roast for 12-15 minutes more, until the salmon flakes easily and the potatoes and beans are very tender.
  3. 3Before seasoning anything, lift out your toddler's portion. Flake the salmon and check carefully with your fingers for any bones. Cut the potatoes into small soft pieces and the beans into short lengths.
  4. 4Now season the family portions however you like (salt, pepper, herbs) once the toddler's share is set aside.
  5. 5Serve the toddler portion warm, with a squeeze of lemon if they enjoy it. Aim to offer fish about twice a week, choosing low-mercury types like salmon.

Check Fish for Bones

Carefully check all fish for bones before serving to infants and young children. Even "boneless" fillets may contain small pin bones.
