Mini egg muffins with spinach and cheese for iron-rich self-feeding.

Ingredients

Egg2 large
Spinach1/2 cup chopped
Cheddar Cheese20g grated

Instructions

  1. 1Preheat oven to 175°C (350°F) and grease a mini muffin tin.
  2. 2Wash and finely chop a handful of fresh spinach.
  3. 3Whisk 2 eggs in a bowl.
  4. 4Mix in the chopped spinach and 1 tablespoon of shredded cheddar cheese.
  5. 5Pour mixture into mini muffin cups, filling each about 3/4 full.
  6. 6Bake for 12-15 minutes until set and lightly golden.
  7. 7Let cool and check muffins are soft and tender — they should be easy for baby to mash with gums. Cut into small pieces for serving.

Eggs must be fully cooked (no runny yolks or whites) when served to infants and young children to prevent Salmonella infection.
