Light and fluffy baked puffs made with sweet potato, egg, and cheddar cheese. These melt-in-your-mouth snacks are perfect for developing pincer grasp skills.

Ingredients

Sweet Potato1 medium
Egg1 large
Cheddar Cheese1/4 cup shredded

Instructions

  1. 1Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. 2Peel and steam the sweet potato until very soft, then mash until smooth.
  3. 3Beat the egg and mix into the sweet potato mash.
  4. 4Stir in finely grated cheddar cheese until well combined.
  5. 5Spoon the mixture into the mini muffin tin, filling each cup about three-quarters full.
  6. 6Bake for 18-20 minutes until puffed and lightly golden. Cool before serving.
