Crispy on the outside, soft inside — these veggie fritters are excellent for self-feeding toddlers. Packed with hidden vegetables.

Ingredients

Zucchini1 small
Carrot1 small
Egg1
Wheat3 tbsp flour
Olive Oilfor frying

Instructions

  1. 1Grate 1 small zucchini and 1 small carrot. Squeeze out excess moisture with a clean towel.
  2. 2Mix grated veggies with 1 beaten egg, 3 tablespoons flour, and a pinch of mild spice (optional).
  3. 3Heat a thin layer of olive oil in a non-stick pan over medium heat.
  4. 4Drop tablespoon-sized portions into the pan and flatten slightly.
  5. 5Cook 2-3 minutes per side until golden and cooked through.
  6. 6Cool on paper towels before serving. Perfect for little hands!

Choking Hazard: Hard Foods

Raw carrots, raw apple chunks, whole nuts, and other hard foods must be cooked until soft or finely ground for infants and toddlers.

Cook Eggs Thoroughly

Eggs must be fully cooked (no runny yolks or whites) when served to infants and young children to prevent Salmonella infection.
