A classic Cantonese slow-simmered soup with watercress and pork ribs, enriched with red dates and honey dates. Known for its cooling and nourishing properties.

- 1Wash 50g watercress thoroughly and cut into shorter lengths.
- 2Cut 80g pork ribs into small pieces.
- 3Remove pits from 4-5 red dates.
- 4Pit 3-4 honey dates (nan zao).
- 5Blanch the pork ribs in boiling water for 2 minutes, drain and rinse.
- 6In a pot, combine blanched pork ribs, watercress, red dates, honey dates, and 4 cups of water.
- 7Bring to a boil, then reduce to low heat and simmer for 1-1.5 hours.
- 8The soup should be milky and flavorful. Remove bones before serving.
- 9Shred the pork meat and serve with the soup and soft watercress.
